Ciambella Coffee CakeINGREDIENTS
• 3/4 cup oil (or 1 stick of butter, softened) • 3/4 cup milk • 3/4 cup sugar • 3 large eggs • 3 tsp. baking powder • 1 tsp. lemon extract • Zest/rind from 1 lemon • 2 1/2 cups all-purpose flour • Sprinkles DIRECTIONS Mix all ingredients together until batter is smooth and flour is incorporated. Pour batter evenly into a greased 9" x 13" cake pan. Add sprinkles on top. Bake at 375 degrees for 30-40 minutes until a toothpick inserted in the center comes out clean. Chef's Note: Oven temperatures vary, so check your cake after 30 minutes. |
"S" CookiesINGREDIENTS
• 1 stick of butter • 4 eggs • 1 cup sugar • Zest/rind from 1 lemon • 1 teaspoon of lemon extract - you can really use any flavor – orange, almond, vanilla etc… • 4 cups of flour • 4 teaspoons of baking powder DIRECTIONS Cream the butter, eggs, sugar, zest and extract together. Add in flour and baking powder and mix until combined. The dough should not be sticky, add more flour if it’s sticky. Shape small S's with your hands. Place on a cookie sheet lined with parchment paper. Bake for 10 minutes at 350 degrees Fahrenheit. In a separate bowl, add 1 cup of powdered sugar, two teaspoons of milk and mix until creamy… you can add a few drops of extract if you want them more flavorful. When the cookie is cool, brush on the frosting and add sprinkles if you wish. |
Nutella CrostataINGREDIENTS
• ½ of a 26.5 oz. jar of Nutella • 2 cups flour • 1 cup sugar • 2 sticks butter • 1 teaspoon baking powder • 1 teaspoon vanilla or a few drops of almond extract • 1 egg plus 1 yolk • Powdered sugar for sprinkling DIRECTIONS Preheat over to 400 degrees. Mix all ingredients together except Nutella. Set aside a fist full of the dough. Press the rest of the dough into a pie dish, including the sides. Put ½ jar of Nutella into a small bowl and cook in the microwave for 20 seconds. Pour melted Nutella on top of dough and spread smooth. Flour your board and lightly knead the dough you set aside. With a rolling pin, roll the dough until it’s about ¼ inch thick (make sure you have flour on the underside.) With a cutting tool, cut long strips. Gently pick up one strip at a time and decorate the top. Crisscross usually works best. Cut a piece of foil large enough to cover the pie dish. Place the foil lightly over the dish. Put in oven for 25 minutes. After 25 minutes reduce heat to 375 degrees, take off foil and allow to bake another 10 to 15 minutes. When cake is cool, sprinkle with powdered sugar! Enjoy! |
Orange Cream CakeINGREDIENTS
• 1 package cream cheese • 3 eggs • 1 cup sugar • ¼ cup oil • grated rind from 1 orange - squeeze the juice from 2 oranges • 2 cups of cake flour • 2 teaspoons of baking powder • pinch of salt DIRECTIONS Preheat oven to 350 degrees F. Grease and flour a 12-inch round pan. In a mixer, add cream cheese, eggs, sugar, oil, orange grate and juice, cream well. Add flour, baking powder and salt. Mix until combined. Bake for 30 to 40 minutes, or until a toothpick inserted in the center comes out clean. Glaze topping • 1 cup of confectioners sugar • Coarsely grated rind from one orange • Juice from orange • 1 tablespoon of milk Add all ingredients in a bowl. Mix with a spoon. When cake is cool, drizzle on with a spoon. It goes great with a cup of coffee! |
Fig Jelly RollINGREDIENTS
• 2 ½ cups flour • 1 cup sugar • 2 sticks butter • 1 teaspoon baking powder • 1 teaspoon vanilla or a few drops of almond extract • 1 egg plus 1 yolk • Jar of Fig Jelly • Powdered sugar for sprinkling (optional) DIRECTIONS To make the dough, combine the flour, sugar, butter, baking powder, vanilla or almond extract and eggs into a mixer. Mix well. Divide dough in half to make two rolls. Simply roll the dough out to about ¼ - inch thick for each one. Spread a layer of the fig jelly on top and roll the dough into a log. Bake at 400 degrees F for 35 minutes. Cool completely and sprinkle with powdered sugar. Using the same dough, you can easily make Nutella Thumbprints. Roll out the dough into a 1 ½ inch log and cut into chunks about 1 ½ -inch by 1 ½ -inch roll. With your thumb, push down the middle to make a deep indention in the center, and add a ½ teaspoon of Nutella. Repeat until all the dough is used. Place each on a parchment-lined cookie sheet and bake at 400 degree F for 25 minutes. When cool, you can sprinkle with powdered sugar. |
