Insalata di Mare

 INGREDIENTS
• 1 package squid tubes
 (cleaned, boiled and sliced when cool)
• 1 package small shrimp (boiled)
• Green onions, chopped
• Mild pepper rings, chopped
• 2 stalks of celery, chopped
• Green olives with pimentos
• Black olives
• Red, green & yellow peppers, chopped
• Parsley, chopped
• Heaping teaspoon crushed garlic
• Salt & pepper, to taste
• Olive oil, to taste
• Red wine vinegar, to taste

​DIRECTIONS
Mix all ingredients together. 
Serve chilled.

Italian Fennel Garden Salad

 INGREDIENTS
• 1 bulb of fennel
• 1 head of radicchio
• Salt and pepper, to taste
• Olive oil
• Balsamic vinegar

Garnish options:
• Leaf lettuce
• Endive
• Cherry tomatoes
• Green onions
• Red onions
• Radishes
• Black olives
• Avocado

DIRECTIONS
Clean all vegetables.
Remove the top leaves of the fennel and cut off the bottom of the bulb. 
Slice the fennel into thin pieces and add to a large bowl.
Slice the radicchio into thin pieces and add to bowl. 
Salt and pepper to taste. Add olive oil and balsamic vinegar to taste. 
Mix well.

Lay a piece of leaf lettuce onto a serving plate. 
Layer a couple pieces of endive on top of the lettuce. 
Add a couple of scoops of the fennel/radicchio mix on top. 
Garnish with green onions, red onions, radishes, black olives and avocado.

Sprinkle a little more olive oil and balsamic vinegar on top.
Enjoy!

Tuna Salad Medley

INGREDIENTS
• 1 Head of lettuce (washed)
• 1 can tuna
• Mixed vegetables of choice
• Olives
• Onion (sliced)
• Salt, pepper to taste
• Touch of pepperoncino 
• Olive oil
• Red wine vinegar or balsamic vinegar

​DIRECTIONS
Wash and prepare lettuce, place in bowl.  
Add in all remaining ingredients and mix well.
Serve and enjoy!
